Manchego
Description
Made from raw ewes’ milk in La Mancha, Spain. It is a beautiful cheese, with a firm, ivory paste, sometimes dotted with small eyes, and a hard rind. During the ripening period, the surface becomes covered with a greenish-black mould.
The taste, depending on the age of the cheese, is salty, slightly to distinctly piquant and melting on the palate.
