The name means ‘sweet milk’ and the cheese has a luscious, sweet taste. Deliciously soft, it melts like ice cream in the mouth. Created by Galbani, Dolcelatte appeals to those who find the more traditional blue cheeses, such as Gorgonzola and Roquefort, too strongly flavoured, robust and spicy. Produced in factories, the cheese ripens in two to three months and has a fat content of around 50%.
The moist, natural rind is white and blotched with blue and grey mould. Its mild sweet flavour creates a unique and unmistakable taste.
