MONTAGNOLO Tarte with pear & fig
Serves 4
INGREDIENTS:
1 Sheet Puff Pastry, thawed
2 Tbsp Extra Virgin Olive Oil
1/4 Sweet Onion, diced
2 Tbsp Fig Jam
2 Tbsp Local Honey
1 Pear, thinly sliced
3 Figs (dried or fresh), cut into quarters
30g Parmesan (or other Italian) Cheese, shredded
30g Montagnolo Cheese
INSTRUCTIONS:
- Preheat oven to 350 degrees. Line a baking sheet with parchment paper. Place Puff Pastry sheet on parchment and thaw according to package directions (about 10 minutes).
- Once Puff Pastry is thawed fold over 1/4 inch edge all around the square to create a crust border.
- Brush Puff Pastry, including folded edges, with Olive Oil. Sprinkle diced onion evenly across the crust. Grind fresh Sea Salt and Black Pepper over top. Smear Fig Jam and Honey over Onions and Olive Oil.
- Layer pears on top of onions in a circular pattern, covering as much of the crust as possible. (You may have a few pieces of pear left over to snack on.) Lay Fig pieces on tart, distributing evenly.
- Sprinkle Parmesan and Montagnolo evenly over tart. Add a little more Sea Salt and Pepper on top.
- Place baking sheet in preheated oven for about 20 minutes until tart crust is brown and puffed, and all cheese is melted.
- Remove from oven and allow to cool a few minutes. Cut tart into 9 square pieces. Serve warm.
Gnocchi With Mushrooms & Blue Cheese


Ingredients
- 2 x 400g packs fresh gnocchi
- 1 tbsp olive oil
- knob of butter
- 1 large onion, roughly chopped
- 500g small Forestière or Portobello mushrooms, sliced
- 2 large garlic cloves, chopped
- 150g pack creamy blue cheese
- small pack parsley, chopped
Method
- STEP 1
- Bring a large pan of water to the boil and cook the gnocchi following pack instructions. When they float to the top of the pan, they are ready. Drain and set aside.
- STEP 2
- Meanwhile, heat the oil and butter in a large lidded frying pan. Add the onion and mushrooms, cook for 1 min over a high heat, then turn down the heat to medium, put the lid on and cook for 5 mins, stirring a few times.
- STEP 3
- Remove the lid and add the garlic, cook for 1-2 mins, then stir the gnocchi into the pan. Scatter over blobs of cheese and the parsley.
